Tortellini Soup with Bacon & Spinach

olive oil

medium onion
diced

cloves
garlic
minced

cups
chicken broth
can substitute vegetable broth
½
pound
fresh tortellini of your choice
2
handfuls
fresh spinach
roughly chopped
½
cup
parmesan cheese
grated, plus more for serving
½
pound
bacon
cooked and sliced into small pieces
salt and pepper
to taste
Instructions
Heat
olive oil
on medium in a large stock pot. Add
onion
and stir occasionally until softened, about 5 minutes.
Reduce heat to medium-low. Add
garlic
and cook until fragrant, about 2 minutes.
Add
chicken broth
to the pot and bring to a boil. Reduce heat to medium-low, cover and simmer for 10 minutes.
Add
tortellini
and cook until tender, about 10 minutes.
Stir in
spinach
and
parmesan cheese
and cook until the cheese has melted. Add
bacon
and
salt and pepper
(to taste).
Serve immediately with grated or shaved
parmesan cheese
