Simple Pasta with Bacon & Corn

Pasta with sweet corn and smoky bacon!

Ingredients

  • 250 grams spaghetti uncooked
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1 shallot diced
  • 4 strips bacon cooked & chopped
  • 1 cup corn kernels cooked
  • Fresh parsley for garnish optional

Instructions

  • Cook spaghetti according to the directions on the package. Drain, reserving a ½ cup of the starchy cooking water.
  • In a large skillet or pot, heat butter and olive oil on medium.
  • Add the shallot and cook for 3 minutes or until softened.
  • Add cooked spaghetti and toss to coat it in the sauce.
  • Pour in the ½ cup of starchy pasta water and add the bacon and corn. Stir to combine and heat until the sauce has thickened.
  • Serve immediately with parsley (if using).
