Simple Pasta with Bacon & Corn

shallot
diced

strips bacon
cooked & chopped

corn kernels
cooked
Fresh parsley for garnish

Instructions
Cook spaghetti according to the directions on the package. Drain, reserving a ½ cup of the starchy cooking water.
In a large skillet or pot, heat butter and olive oil on medium.
Add the shallot and cook for 3 minutes or until softened.
Add cooked spaghetti and toss to coat it in the sauce.
Pour in the ½ cup of starchy pasta water and add the bacon and corn. Stir to combine and heat until the sauce has thickened.
Serve immediately with parsley (if using).
