Ingredients
- 250 grams spaghetti uncooked
- 2 tbsp butter
- 2 tbsp olive oil
- 1 shallot diced
- 4 strips bacon cooked & chopped
- 1 cup corn kernels cooked
- Fresh parsley for garnish optional
Instructions
- Cook spaghetti according to the directions on the package. Drain, reserving a ½ cup of the starchy cooking water.
- In a large skillet or pot, heat butter and olive oil on medium.
- Add the shallot and cook for 3 minutes or until softened.
- Add cooked spaghetti and toss to coat it in the sauce.
- Pour in the ½ cup of starchy pasta water and add the bacon and corn. Stir to combine and heat until the sauce has thickened.
